Lemons are originating from India and Malaysia and there is a category of fruits available all year, distinguishing by shape, size and skin thickness. Limes are a very close relative of lemons, but being smaller, more flavorful and fragrant. Grown in the tropical countries they are very common in Caribbean and Brazilian cuisine.

Both fruits are the main ingredients for the bartender, their freshly squeezed juice is used to balance the sweet taste of cocktails, adding personality to drinks. Lemon and lime juice clots the liquid cream and milk based liqueurs being preferred to mix with other spirits and liqueurs. Lemons make a perfect pair usually with rum, and lemon with whiskey or brandy.

Limes and lemons last longer if they are kept in the refrigerator, but you get a greater quantity of juice if, before spinning, the fruit is brought to room temperature and then rolled between the palm and the cutting board before being cut. Keep harder fruits for decoration. Soft fruits contain more juice and flavor.

To squeeze them, cut the fruit into two and extract the juice with a citrus squeezer. But be careful not to squeeze even the white part between the peel and the flesh, it is very bitter. It is advisable to squeeze the fruit with maximum a few hours before being used because it oxidizes.

Lemons and limes are number one decorations in the bar. Gin & Tonic is not complete without a wedge of lime, and even the poorest bar must afford to put a slice of lemon in a glass of cola. Lemons and limes add a fresh air from a glass of water, up to a classic Dry Martini. You can cut them wedge, sliced, or chopped for “zest” or “twist”.
